Tonights dinner is some succulent Pork Chops that I was able to fry up for a delicious dinner. This dinner is a family staple in my house and I am usually sitting by the table with fork in knife in hand banging on the table in anticipation.
You first start out with some nice fresh pork chops. You can have them with the bone, or without, but I prefer with the bone if you can find it (I was not able to...). Next you set up your ingredients
Olive Oil
Breadcrumbs
Garlic
Parsley
Pepper (Lemon Pepper in this case)
Onion powder
Some alternative ingredients would be :
Grated cheese (to add to the breadcrumbs)
Fresh mozzarella to be placed on at the end as well
My first dilemma was I did not have any breadcrumbs, so I had to make them from scratch. This is not as hard of a task as you think. All you do is take a processor of some sort (I have a knockoff magic bullet called the 'Bella Cucina') and throw some garlic cloves in there for chopping. Next throw in some parsley for the same fate. Toss them in a bowl and then, for me, I simply took two slices of whole wheat bread that you usually make sandwiches with and throw it in the blender like device as well, no toasting needed. You'll actually find that making your own breadcrumbs per need is tastier and pretty easy once you get the hang of it.
Season your pork chops with salt and (in my case Lemon pepper) pepper. Next, you roll up your sleeves and pour/dip the pork chops in extra virgin/regular olive oil then into the fresh breadcrumbs you just made (or store bought ones, I wont be mad). When they're nice and coated, start frying them up on a medium heat.
Cook them through on both sides, perhaps flipping them twice if you want to make sure they're cooked through. In the states I usually leave a little pink in the middle. If you dont feel like frying them then you can (and at home it is usually done like this) put them in the oven, over thin chips of potatoes in a pan at 375 for 30-45 min making sure to flip them once. For style points I sliced some tomato over it along with a cornucopia of vegetables sautéed with some marinara sauce from the previous night.
