9/11 Morning Edition: Whats for Breakfast?


On this special 9/11 morning edition of the Med Chef I give you a quick and easy egg recipe that came to me after a morning run (or actually I thought of it right before I went to bed, goes to show you how often I think about food).  I was thinking to myself and said, "Sal, tomorrow is the 11th anniversary of September 11th and you haven't had bacon in a while...whats more patriotic than bacon." And then, in a panic, I realized I didn't have any.  Despite that fact, I did realize I had some Genoa Salami (sliced thin- a recommendation I give to any cold cut or lunch meat for those people not from the North East Coast).

So I started with sliced up and chopped up Salami.  I did it fast and just rolled it up in my hand and sliced it with food scissors.  I let that render down, since it would provide the lipid for cooking the eggs.  Even though its a non-stick pan, a little oil or fat will help out and add flavor.  Once it was crisped I addd 2 scrambled eggs with a pinch of milk in the eggs along with salt and pepper. Then I asked myself how I could make it a little bit more tastier and said that a little shaved Asiago cheese would do just the trick!  I let this fry up till it was slightly brown around the edges, just the way I like it.  Be sure to cook to your tasting though, as a cook, you hold the power to control the quality of your food.

I toasted a slice of whole wheat bread and laid the eggs, asiago and salami on top of the toast like an overwhelmed weight lifter squatting more than he can bear (which is why you can barely see the edges of the toast in the pictures).  At the end I added a pinch of Grenadian hot sauce and a dashing of ketchup.  That is purely by preference and you can be creative as you want, but this is one of few times I ever use ketchup.






So in utter reverence and solitude I give you my breakfast for this morning.  My thoughts and prayers are with everyone this Patriots day and a large group of us know that we will never forget.  


P.S. Other additions that I would have/could have done would be add some fresh herbs like parsley or basil in there as well as some peppers or onions too.  The choice is yours.
